Natural Resource Reduction Strategy

We are bound by the systems in place at Borough Market (e.g. we can only use electricity and not natural gas) and currently have no influence on tariff or water metering.  In our own unit we do the following to reduce our impact on natural resource usage:
    * We have LED lighting
    * We only turn on equipment when it is needed
    * We have induction hobs which reduce the amount of energy wasted as heat compared to standard hobs
    * 90% of our cleaning products are environmentally friendly
    * 100% of our packaging is recyclable and 95% is compostable and made from natural resources.

Electricity Usage Target
We monitor electricity usage via the meter annually.  We have tried to use reduction targets over the last 12 months but found the process difficult due to the impact of changes in weather and increases in the number of customers. Therefore, this year we have focussed on training staff on a regular basis to be mindful about energy / water usage.

For the following 12 months we are going to monitor quarterly and use a kWh per customer value and note down weather summaries.
